It is officially SPRING here in Denmark! However, the weather doesn’t seem to agree. There has been more snow this past week in Copenhagen than there has been all winter. It is bitter cold outside. It doesn’t matter how many layers I put on – I still freeze! The canal has even frozen over.
Hello, everyone! It is almost one of my very favorite days of the year – Valentine’s Day. As you are reading this, I will be skiing up in the mountains of Sweden. However, I still wanted to celebrate this lovely holiday here on my blog! Of course, the best way to celebrate is with cake. 🙂
Why not celebrate the weekend with some yummy (and easy) muffins? It’s no secret that breakfast is one of my favorite things in the whole wide world. If you were to ask my family and friends, they would probably tell you that muffins are my specialty.
This past Sunday I decided that I wanted to whip up some healthy food to eat throughout the week. I want to kick off the new year by eating less junk food, and I have found that meal prepping certainly helps. So I spent around two hours in the kitchen making a delicious cucumber, tomato, chickpea salad for lunches and banana bread for breakfasts and snacks!

I am currently sitting here drinking some spiced apple tea and listing to the Cozy Christmas Nights playlist on Spotify. I am trying to relax and enjoy a quiet evening to myself before all the Christmas festivities begin. It all goes by TOO FAST!
