Summer is slowing down, and I am making sure to savor every moment. With nearly a month left before autumn starts creeping in, there is still plenty of time to enjoy the warm weather and sunshine. Last year I wrote a post about how to embrace hygge in the fall as well as explained the special Danish tradition of hygge. I really enjoy making some healthy snacks at the beginning of the week. This way I’m never searching for something to eat or reaching for junk food when things get busy. These muffins were perfect. They made a great grab-and-go breakfast or afternoon snack. My whole family loved them!

Before heading to the states, Nicolas and I went out for a lovely Sunday brunch. It is no secret that brunch is my favorite thing in the world. (I’m pretty sure I mention it in every other blog post!) We had heard a lot of good things about Mad og Kaffe (translated to food and coffee 🙂 ) and decided to give it a try. It is officially SPRING here in Denmark! However, the weather doesn’t seem to agree. There has been more snow this past week in Copenhagen than there has been all winter. It is bitter cold outside. It doesn’t matter how many layers I put on – I still freeze! The canal has even frozen over.
