How has it been EIGHT MONTHS since I posted a muffin recipe?

Last weekend, Nicolas turned 25! He had never experienced a proper birthday weekend before, and no one deserves a wonderful birthday more than him, so we celebrated Friday, Saturday, Sunday, and Monday! Along with celebrating at work, my family had the coziest party for him. On Saturday, we left for a little weekend getaway to State College.
Ohh, this recipe! I am so happy to share it with you all. Homemade applesauce is one of my favorite fall treats, and after enjoying it at a local restaurant, I decided to try to make some myself. I simply used what I had on hand. I wanted to keep it healthy and simple. I think this would be perfect to have cooking in the crockpot on Thanksgiving day.

Pumpkin treats are my favorite thing to indulge in this time of year (or really any time of the year!) I’d love to eat pumpkin pie, pumpkin cake, and pumpkin cookies all day long, but we all know that isn’t the best for our bodies (unfortunately. 🙁 ) I made it my mission to find a delicious and healthy pumpkin recipe, and that is what I am going to share with you all today.
Before heading to the states, Nicolas and I went out for a lovely Sunday brunch. It is no secret that brunch is my favorite thing in the world. (I’m pretty sure I mention it in every other blog post!) We had heard a lot of good things about Mad og Kaffe (translated to food and coffee 🙂 ) and decided to give it a try. Spoiler alert: It was AMAZING.
