Yes, it is another pumpkin breakfast recipe! I promise I saved the best recipe for last. These waffles made the yummiest breakfast, and my family couldn’t tell that they were secretly made with healthy ingredients. 😉
I used this recipe from Layers of Happiness but made a few adjustments. I didn’t have any whole wheat flour on hand, so I simply used all-purpose white flour. (Using the whole wheat flour obviously makes these waffles much better for you. 🙂 ) I also substituted light maple syrup for honey. I only added chocolate chips to half of the batter so there was more variety. Both were delicious!
Nicolas topped his waffles with tons of whipped cream! My mom preferred hers with a dusting of powdered sugar and some fruit. I ate mine with a little butter, a drizzle of maple syrup, banana, and blueberries. I doubled the recipe and froze some of the waffles, too! To reheat, pop them in the toaster for a few minutes, and you’re good to go!
