Raspberry Thumbprint Cookies // 12 Days of Christmas Day 8

I am currently sitting here drinking some spiced apple tea and listing to the Cozy Christmas Nights playlist on Spotify. I am trying to relax and enjoy a quiet evening to myself before all the Christmas festivities begin. It all goes by TOO FAST! I am so excited to celebrate my first Christmas in Denmark, and I want to enjoy and cherish every moment. 

Day 7 of my 12 Days of Christmas is a simple cookie recipe that you can quickly whip up for dessert or wrap up as a list minute gift. This recipe only requires a handful of ingredients, and you probably already have all of them in your kitchen!

I used this recipe from allrecipes.com. I only made a few small changes. I added a little vanilla (because I love vanilla.) Also, my dough seemed a little dry after I had mixed it, so I added about a tablespoon of milk. Make sure not to skip chilling your dough in the refrigerator! It really helped the cookies keep their shape. I used the back of a 1/4 teaspoon to form the “thumbprint” in each cookie, and it worked perfectly! My final tip is to not overfill the cookies with too much marmalade, as it could overflow while baking. After the cookies were done and cooled, I dusted them with a little powdered sugar. I think they turned out beautifully, and they honestly taste SO GOOD. I highly encourage all of you to try this recipe. (I might even like these ones better than my hot chocolate cookies. 😉 )

Today’s Yankee Candle is super appropriate – Christmas Cookie! I ADORE this candle. It is one of my favorites with vanilla, nutmeg, and cinnamon sugar. 🙂 Today’s Fredsted tea is Go Strong! It is a blend of mate, fennel, and orange. I love trying all of these flavors, especially the ones I have never even heard of before!     Lovely cookies, Madison. I have finished wrapping but need to bake off the cookie dough that’s chilling in the refrigerator. Christmas Cookie is my husband’s favorite candle! It smells divine. ♥

    Oh Madison, one of my favorite cookies. Presents need to be wrapped, I had to rehide them as my husband thinks he is being sneaky, giggling. At least my son, who is 20, isn’t nosy, smiles.

    Thank you for the many smiles you have been bringing our way… My sons ‘galpal’ just returned to Germany for the holidays, so between her photos and your posts, we have been “traveling”around Europe, smiles.
