Oatmeal Banana Bread

This past Sunday I decided that I wanted to whip up some healthyΒ food to eat throughout the week. I want to kick off the new year by eating less junk food, and I have found that meal prepping certainly helps. So I spent around two hours in the kitchen making a delicious cucumber, tomato, chickpea salad for lunches and banana bread for breakfasts and snacks!

I took my time trying to find the perfect banana bread recipe. I already have a really good one I make quite frequently, but it is more of a dessert with quite a bit of sugar. Don’t get me wrong – it is totally delicious and is a nice little treat to have every now and then! However, I wanted to make something a little more filling and nutritious.

I finally stumbled across this recipe from yellowblissroad.com. It is PERFECT. This banana bread is made with yogurt (any flavor of your choice!) and oats. It also has around half the amount of sugar than the banana bread I normally make.

There is also plenty of room for creativity with this recipe. You can swap out all-purpose flour for whole wheat flour. You can also throw in some berries, nuts, or chocolate chips. I sprinkled the top of mine with some extra oats before baking. It was also recommended to serve the bread with a little bit of jam on top. I had never tried this before (I’m more of a butter type of girl), but I absolutely LOVED eating this with some blackberry marmalade. So, so yummy! My friend Emily said she loves eating banana bread with Nutella! I have yet to try that, but I imagine it is delicious as well. πŸ™‚

    I have a pretty similar recipe for banana bread and I agree, it’s so good. We do our bread almost always, and it’s always different! These are so easy to mix up πŸ™‚

    Yummy looking bread, Madison. I like to make baked oatmeal for breakfast, especially in the winter. There are many recipes online that you can use a variety of fruit and nuts. β™₯
