Simple Pumpkin French Toast // 7 Days of Pumpkin

Happy Day 5 of 7 Days of Pumpkin! It is no secret that breakfast is my favorite meal of the day. It is also no secret that pumpkin spice is one of my very favorite flavors. One morning I decided to get creative and put a spin on my mom’s famous French toast. (She is the French toast QUEEN.) This is a very simple recipe, so I hope you’ll give it a try! I’ll also include some tips on how to make the perfect French toast.

My mom’s traditional French toast recipe consists of white bread, milk, eggs, cinnamon, and one more special ingredient. 🙂

To make pumpkin spice French toast, I used Thomas Pumpkin Spice Swirl Bread. It is that easy! I love this toasted with a bit of butter, so I was certain that it would make a delicious French toast.

And now for the special ingredient … vanilla extract! Some people may not know about this trick. A dash of vanilla extract makes such a difference. French toast was one of the first things my mom ever learned how to make, and she has always used a hint of vanilla. A tip I discovered and have since taught my mom is to pour the egg mixture into a shallow, rectangular pan instead of keeping it in the mixing bowl. This way you can ensure that your bread will be evenly coated and not too soggy. It honestly just makes the dipping process much easier! The final tip I have for you all is to not add the cinnamon to the egg mixture. Dipping the bread first and then sprinkling it with cinnamon once it is on the griddle makes sure that there is cinnamon in every bite!

To make Simple Pumpkin French Toast: 

Serves 6-8

Ingredients

  • 6 large eggs
  • 6 Tablespoons milk
  • splash of vanilla extract
  • ground cinnamon
  • Thomas Pumpkin Spice Swirl Bread (or any bread of choice)
  • whipped cream, powdered sugar, maple syrup, and/ or butter for topping

Instructions

  1. Preheat griddle to 350 F/ 176 C or heat a pan over medium heat. Grease well with butter or cooking spray.

  2. Whisk together eggs and milk. If cooking for a smaller or larger crowd, simply use the ratio 1 tablespoon of milk per every egg.

  3. Dip bread slices into the egg mixture, making sure to coat both sides, and place on hot, greased griddle or pan. Sprinkle with cinnamon.

  4. Cook for a few minutes until golden brown and crispy. Flip, sprinkle with cinnamon, and cook the other side of the bread exactly the same.

  5. Transfer to plate and serve warm, with syrup and a sprinkle of powdered sugar.

    This is my favorite breakfast! Looks so yummy and my mom taught me to add a splash of vanilla too! You are capturing the season just perfectly with these posts! : )

    Looks and sounds delicious. Porridge oats with dried fruit and nuts is our go to breakfast for the cooler months.

    Yes! I always add vanilla to French toast! I may have to see if they have pumpkin swirl bread at my store because this sounds like a great breakfast!
