Healthy Banana Pumpkin Muffins // 7 Days of Pumpkin

Happy 7 Days of Pumpkin Day 2! If you missed yesterday’s post all about going to the pumpkin patch, you can read about it here.

Pumpkin treats are my favorite thing to indulge in this time of year (or really any time of the year!) I’d love to eat pumpkin pie, pumpkin cake, and pumpkin cookies all day long, but we all know that isn’t the best for our bodies (unfortunately. 🙁 ) I made it my mission to find a delicious and healthy pumpkin recipe, and that is what I am going to share with you all today. My family loved these muffins! They are flavorful, filling, and moist. I love eating them for breakfast or taking them to work as a snack. I even froze some extras for later on.

To make the muffins, I simply followed this recipe for pumpkin banana bread from skinnytaste.com. By doubling it, I was able to make 24 muffins. I sprinkled half of the muffins with some semi-sweet chocolate chips per request of my little sister. 🙂 I ended up baking them for 22 minutes, and they turned out perfectly!
